Author: Eat Mega
Recipe type: Dessert
1.5 pounds of sweet potato
One cup of brown sugar
One cup of flour
Two cups of coconut milk
Half a cup of cornmeal
Tablespoon of cinnamon
Tablespoon of butter
Half teaspoon of crushed ginger
Half teaspoon of nutmeg
Half teaspoon of allspice
Two teaspoons of vanilla extract
Two tablespoons of rum
Before you begin, preheat your oven to 350F.
Now it’s time to grate your sweet potatoes. You want them to be even and smoothly grated, and this can be done either with a food processor or by hand. Then you simply add all of the above ingredients into a bowl; stir vigorously to blend them together.
Pour your mixture into a lightly greased baking pan, and then let it settle for about 15 minutes. You can now put it into the oven for 60-90 minutes. At the hour mark, use a knife to see if the center is ready. If it is ready, your knife should come out without any liquid residue. Once your pudding is ready, it should be soft on top and like a cake in the center.
If you’d like, you can also add some salt to help balance out the nutmeg and ginger.

With this recipe, you will be able to enjoy dessert while reaping all of the benefits of sweet potatoes!
Some healthy facts about sweet potatoes:
Sweet potatoes are a starchy and vitamin rich plant that make for delectable cooking. While they can be cooked in the same way as traditional potatoes, sweet potatoes are generally sweeter, richer in taste, and more vibrant in color. Also, these potatoes have a vast range of benefits including large amounts of vitamin A, zinc, and complex fibers.
While carrots may seem like the champion of beta-carotene, sweet potatoes actually contain more beta-carotene per ounce than carrots and other similar foods. Beta-carotene is a precursor for vitamin A, and the health benefits are enormous. Not only does vitamin A help to keep your immune system strong and active, it also is known to help your skin, vision, and even your mood.
A recent study shows that sweet potatoes contain a high amount of antioxidants. In the form of select proteins, these unique antioxidants help to protect you from cell damage as you age. While eating sweet potatoes may not cure the most serious forms of cell damage, adding them to your diet can greatly increase your chances of staying healthy and vibrant for years to come.
